Cornish Kern is a hard, Alpine-style cheese made to a Dutch Gouda recipe by Lynher Dairies located near Truro in Cornwall, using Alpine starter cultures and high-quality Ayrshire milk from the herd. Matured for 16–22 months, Kern develops a long and complex flavour profile, with a balance of sweet and savoury notes that evolves with age.

The texture is fudge-like with a gentle flintiness, while the flavour can range from sweet and fruity to deeply savoury and umami-rich. In the sweeter batches, expect notes of pineapple and dried fruit; the more savoury cheeses can have flavours reminiscent of bone broth and umami. The best batches bring both sides together.
