Hand-crafted using milk from our grass-fed cows, our Mature Clothbound Cheddar is traditionally clothbound and naturally matured here at Quicke’s. Creamy and buttery, with layers of brothy, grassy and caramel notes, it develops a wonderfully complex flavour as it matures.

Our 1.8kg truckles make a generous gift or a show-stopping addition to a splendid feast (especially at Christmas).

Because these truckles are smaller and more compact than our traditional 27kg cheeses, they develop their own glorious character and flavour. They are matured for 3–6 months, giving each truckle its own distinctive taste and texture.
